San Giusto extra virgin olive oil is made from the first pressing of our estate grown olives, hand-picked with the aid of electro-pneumatic collection facilitators in November. It is a blend of several varieties, predominately Frantoio (Correggiolo) , with lesser amounts of Leccino, Moraiolo and Pendolino.The normally favourable summer climate allows us to cultivate our olive trees with limited use of antiparasites, following the prescribed methods of organic farming. The olives are crushed every 24-48 hours during picking.Their oil is extracted using a temperature controlled, cold-press system. After being filtered lightly, the oil is bottled in dark glass to protect it from oxidation caused by light. When properly stored in a cool place, San Giusto a Rentenanno extra virgin olive oil will retain its freshness and intense flavour for at least two years.
